Creamy Cauliflower Sauce

Ingredients

  • 8 cloves garlic, minced
  • 2 tablespoons butter
  • 5–6 cups cauliflower florets
  • 6–7 cups vegetable broth or water
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ½ cup milk

Instructions

  1. 1. Sauté minced garlic with butter in a nonstick skillet over low heat until soft and fragrant.
  2. 2. Boil vegetable broth or water in a large pot, add cauliflower, and cook covered for 7-10 minutes until fork tender.
  3. 3. Transfer cauliflower to a blender with some cooking liquid, sautéed garlic, salt, pepper, and milk. Blend until smooth, adjusting thickness with more broth or milk as needed.
  4. 4. Serve hot, adding water or olive oil if the sauce appears dry.
