Ingredients

  • 1 medium head cauliflower, cut into florets
  • ½ cup water
  • 1 cup 2% milk
  • ½ cup grated parmesan cheese
  • 1 teaspoon dried parsley
  • a pinch nutmeg
  • ¼ teaspoon black pepper
  • 3 oz. cream cheese

Instructions

  1. 1. Heat a medium saucepan over medium-high heat and add the cauliflower florets and water. Cover to steam.
  2. 2. Steam the cauliflower until tender, about 7-10 minutes.
  3. 3. Remove the cauliflower from the pan and place it into a blender.
  4. 4. Add the milk, parmesan, parsley, nutmeg, black pepper, and cream cheese to the blender with the cauliflower.
  5. 5. Blend until smooth, achieving a puree-like consistency.
  6. 6. Serve the sauce over noodles.
  7. 7. Store any leftovers in an airtight container for up to 3 days.
