Dairy Free Cauliflower Alfredo Sauce

canned coconut milk or non-dairy milk
Instructions
- 1. Bring a large pot of boiling water or broth to a boil and cook the cauliflower for 8-10 minutes until tender.
- 2. Drain the cauliflower and set aside.
- 3. In the same pot, heat oil and sauté the onion and garlic until fragrant.
- 4. Add the cauliflower and Italian seasonings, cooking for an additional 2 minutes.
- 5. Transfer the mixture to a blender and blend until combined.
- 6. Add broth, nutritional yeast, salt, and pepper, then blend again.
- 7. Return the puree to the pot and stir in the coconut milk or non-dairy milk, heating until combined.
- 8. Serve with veggie noodles or gluten-free pasta.
