Ingredients

  • 1 lb roughly chopped cauliflower florets
  • cups chicken broth
  • 1 teaspoon onion powder
  • 1 teaspoon kosher salt
  • 2 teaspoons extra virgin olive oil
  • 4-5 cloves garlic
  • ¼ cup freshly shredded Parmesan cheese
  • 1 ounce low-fat cream cheese

Instructions

  1. Simmer the broth and add the chopped cauliflower, cover, and cook until tender (about 5-6 minutes).
  2. Drain the cauliflower, reserving the broth, and transfer it to a food processor or blender.
  3. In the same pot, heat olive oil and sauté the minced garlic until fragrant (30-60 seconds).
  4. Add the sautéed garlic and oil to the cauliflower along with onion powder, salt, reserved broth, and cheeses.
  5. Blend until smooth and creamy, adjusting salt and liquid to taste.
