The dish
Instructions
- Prepare the sauce by whisking all sauce ingredients together in a large jar or bowl and set aside.
- Cook the noodles according to package instructions, starting them once the 'meat' is simmering.
- In a food processor, pulse the walnuts until crumbly, then transfer to a preheated pot with sesame oil on low heat.
- In the same processor, pulse mushrooms, tofu, and yellow onion until crumbly, then add to the pot with walnuts and increase heat to medium.
- Cook the mixture for 10 minutes until mushrooms sweat out moisture.
- Create an opening in the pot, add green onion, garlic, soy sauce, black bean paste, and wine, cooking for 1 minute before combining.
- Cook everything together for an additional 6-7 minutes.
- Assemble bowls with noodles, sauce, and vegan meat toppings, stirring to combine and topping with more onions, chili oil, and sauce.
