Vegan Dan Dan Noodles

Ingredients

The meat

  • 1 cup walnuts
  • 2 cups assorted or brown mushrooms
  • ½ block tofu
  • 1 small yellow onion
  • 2 green onions finely chopped
  • 3 cloves garlic
  • 2 tbsp soy sauce
  • 2 tbsp black bean paste
  • 2 tbsp Shaoxing wine

The sauce

  • 4 tbsp peanut butter or almond butter or tahini
  • 3 tbsp soy sauce
  • 3 tbsp rice wine vinegar
  • 3 large garlic cloves
  • 3 green onions finely chopped
  • 2 tbsp maple syrup or honey or agave
  • ½ cup chili oil
  • 1 tbsp Sambal Oelek

The dish

  • 300 g noodles of choice

Instructions

  1. Prepare the sauce by whisking all sauce ingredients together in a large jar or bowl and set aside.
  2. Cook the noodles according to package instructions, starting them once the 'meat' is simmering.
  3. In a food processor, pulse the walnuts until crumbly, then transfer to a preheated pot with sesame oil on low heat.
  4. In the same processor, pulse mushrooms, tofu, and yellow onion until crumbly, then add to the pot with walnuts and increase heat to medium.
  5. Cook the mixture for 10 minutes until mushrooms sweat out moisture.
  6. Create an opening in the pot, add green onion, garlic, soy sauce, black bean paste, and wine, cooking for 1 minute before combining.
  7. Cook everything together for an additional 6-7 minutes.
  8. Assemble bowls with noodles, sauce, and vegan meat toppings, stirring to combine and topping with more onions, chili oil, and sauce.
