Vegan Sesame Noodles
Ingredients
The Noodles

Chinese noodles (udon or brown rice noodles)

sesame oil
The Maple Ginger Sauce

maple syrup or vegan honey product

liquid aminos or low sodium/light soy sauce

sesame seeds

ground ginger

Sriracha

chopped scallions (for garnish)

ground black pepper
Instructions
- Whisk all the ingredients together for the sauce and set aside.
- Boil salted water, add the noodles, and cook according to package directions. Drain and cool.
- Heat sesame oil in a pan over medium-high heat, add the noodles, and stir until simmering (about 2 minutes).
- Add the maple ginger sauce and stir to coat the noodles, cooking for an additional 2 minutes on medium-low heat.
- Remove from heat, add chopped scallions and extra sesame seeds, and serve immediately.
