Mediterranean Tuna Pasta

Ingredients

The sauce

  • 2 Tbsp olive oil
  • 1 medium yellow onion
  • ½ Tbsp minced garlic
  • 4-5 filets anchovy filets
  • 1 28 oz. can diced or crushed tomatoes
  • ½ cup kalamata olives
  • ½ Tbsp dried basil
  • ¼ tsp crushed red pepper
  • ½ tsp salt
  • to taste freshly cracked black pepper
  • 2 medium squash (green, yellow)

The protein

  • 12 oz. tuna steaks

The garnish

  • ¼ bunch fresh parsley

The pasta

  • ½ lb. pasta

Instructions

  1. Heat olive oil in a large skillet and cook diced onion, minced garlic, and anchovy filets until the onions are soft.
  2. Add sliced squash to the skillet and sauté until slightly softened.
  3. Stir in diced tomatoes, chopped olives, basil, crushed red pepper, salt, and black pepper.
  4. Nestle the tuna steaks into the sauce, cover, and let simmer until cooked through.
  5. Cook pasta according to package directions until al dente, then drain.
  6. Remove tuna from the skillet, stir in chopped parsley and cooked pasta, and serve with tuna on top.
