Tuna and Red Pepper Pasta

Ingredients

The pasta

  • 1 lb pasta, any shape

The sauce

  • ¼ cup extra virgin olive oil
  • 1 Tbsp minced garlic
  • ½ tsp crushed red pepper
  • ½ bunch fresh parsley
  • to taste salt and pepper

The protein

  • 1 5 oz can chunk tuna

Instructions

  1. 1. Boil a large pot of lightly salted water and cook the pasta according to the package directions.
  2. 2. While the pasta cooks, heat olive oil and minced garlic in a large skillet over medium heat for 1-2 minutes until fragrant.
  3. 3. Add crushed red pepper and cook for 1-2 minutes more, being careful not to burn it.
  4. 4. Carefully add 1-2 ladles of pasta cooking water and about ¼ bunch of chopped parsley to the skillet, and let simmer until the pasta is done.
  5. 5. Once the pasta is al dente, drain it and add it to the skillet, stirring everything together and seasoning with salt and pepper to taste.
  6. 6. If there's still liquid in the skillet, let it simmer until mostly evaporated.
  7. 7. Drain the tuna and gently stir it into the pasta mixture, adding more parsley, red pepper, or seasoning if desired.
  8. 8. Serve hot.
