Tuna and Red Pepper Pasta

Instructions
- 1. Boil a large pot of lightly salted water and cook the pasta according to the package directions.
- 2. While the pasta cooks, heat olive oil and minced garlic in a large skillet over medium heat for 1-2 minutes until fragrant.
- 3. Add crushed red pepper and cook for 1-2 minutes more, being careful not to burn it.
- 4. Carefully add 1-2 ladles of pasta cooking water and about ¼ bunch of chopped parsley to the skillet, and let simmer until the pasta is done.
- 5. Once the pasta is al dente, drain it and add it to the skillet, stirring everything together and seasoning with salt and pepper to taste.
- 6. If there's still liquid in the skillet, let it simmer until mostly evaporated.
- 7. Drain the tuna and gently stir it into the pasta mixture, adding more parsley, red pepper, or seasoning if desired.
- 8. Serve hot.
