Tuna Pesto Pasta

pesto

freshly grated Parmesan

flat-leaf Italian parsley, chopped
Instructions
- Boil salted water in a large pot and cook the spaghetti according to package directions.
- Reserve ½ cup of pasta water, then drain the spaghetti and set aside.
- In the same pot, heat olive oil over medium heat and sauté minced garlic until fragrant.
- Add reserved pasta water and bring to a simmer.
- Return the spaghetti to the pot and cook for 1-2 minutes, tossing constantly until the water is absorbed.
- Turn off the heat and mix in pesto, salt, pepper, and half of the grated Parmesan.
- Taste and adjust seasoning as needed.
- Gently fold in the tuna, keeping it in bite-sized chunks.
- Serve in bowls topped with remaining Parmesan and chopped parsley if desired.
