Tuna Pesto Pasta

Ingredients

The pasta

  • 12 ounces whole grain spaghetti

The sauce

  • 3 tablespoons olive oil
  • 3-4 cloves garlic, peeled and minced
  • cup pesto
  • 1 teaspoon coarse salt
  • ½ teaspoon freshly ground black pepper
  • ½ cup freshly grated Parmesan

The protein

  • 3 2.6-ounce pouches tuna

Optional garnish

  • ½ cup flat-leaf Italian parsley, chopped

Instructions

  1. Boil salted water in a large pot and cook the spaghetti according to package directions.
  2. Reserve ½ cup of pasta water, then drain the spaghetti and set aside.
  3. In the same pot, heat olive oil over medium heat and sauté minced garlic until fragrant.
  4. Add reserved pasta water and bring to a simmer.
  5. Return the spaghetti to the pot and cook for 1-2 minutes, tossing constantly until the water is absorbed.
  6. Turn off the heat and mix in pesto, salt, pepper, and half of the grated Parmesan.
  7. Taste and adjust seasoning as needed.
  8. Gently fold in the tuna, keeping it in bite-sized chunks.
  9. Serve in bowls topped with remaining Parmesan and chopped parsley if desired.
