Instructions
- Prepare the rice and toppings and set them aside.
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Prep the lentils by mixing the ingredients in a large bowl.
- Spread the lentils onto the baking sheet evenly and bake for 10-15 minutes, stirring occasionally.
- Blend all ingredients for the Green Goddess Sauce until combined.
- Divide the rice into bowls, add the toppings, and dollop with the sauce.
