Ingredients

The rice and toppings

  • 1 package RightRice Garlic Herb rice
  • to taste fresh tomatoes
  • to taste feta or vegan feta
  • to taste olives
  • to taste pita chips
  • to taste beans or lentils or chickpeas
  • to taste lettuce

Crispy lentils

  • 1 can (550 ml) lentils
  • ¼ cup capers
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • ½ tsp red pepper chili flakes
  • 1 dash salt and pepper

Green Goddess Sauce

  • 1 large handful fresh cilantro
  • 1 large handful fresh parsley
  • 3 tbsp olive oil
  • 1 small lemon (juiced)
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 cup Greek yogurt
  • 3 cloves garlic (roasted or raw)

Instructions

  1. Prepare the rice and toppings and set them aside.
  2. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  3. Prep the lentils by mixing the ingredients in a large bowl.
  4. Spread the lentils onto the baking sheet evenly and bake for 10-15 minutes, stirring occasionally.
  5. Blend all ingredients for the Green Goddess Sauce until combined.
  6. Divide the rice into bowls, add the toppings, and dollop with the sauce.
