Ingredients

The pancakes

  • 1 lb medium-sized Russet potatoes, peeled and grated
  • 1 large egg
  • 1 small yellow onion, grated
  • 3 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 tablespoons cooking oil

For serving

  • 2 tablespoons sour cream
  • to taste chopped parsley

Instructions

  1. Grate the peeled potatoes and onion into a bowl and rinse them.
  2. Combine the grated potatoes, onion, and egg in a bowl, then season with salt and pepper.
  3. Sift in the all-purpose flour and mix until well combined.
  4. Heat oil in a skillet over medium-high heat.
  5. Drop about two tablespoons of the mixture into the skillet and flatten it.
  6. Fry each side for about 5 minutes or until golden brown.
  7. Transfer the pancakes to a paper towel-lined plate to absorb excess oil.
  8. Serve warm with sour cream and garnish with parsley.
