Potato Pancakes

Instructions
- Grate the peeled potatoes and onion into a bowl and rinse them.
- Combine the grated potatoes, onion, and egg in a bowl, then season with salt and pepper.
- Sift in the all-purpose flour and mix until well combined.
- Heat oil in a skillet over medium-high heat.
- Drop about two tablespoons of the mixture into the skillet and flatten it.
- Fry each side for about 5 minutes or until golden brown.
- Transfer the pancakes to a paper towel-lined plate to absorb excess oil.
- Serve warm with sour cream and garnish with parsley.
