Ingredients

The pancakes

  • 2 large potatoes
  • 1 small onion
  • 2 units eggs (lightly beaten)
  • ¼ cup whole wheat flour
  • 1 tsp sea salt
  • ¼ tsp black pepper
  • as needed unit avocado oil (for frying)

Toppings

  • as needed unit sour cream
  • as needed unit chopped herbs (optional garnish)

Instructions

  1. Peel and grate the potatoes using a box grater or food processor.
  2. Squeeze out as much liquid as possible from the grated potatoes using a clean kitchen towel or cheesecloth, then transfer to a mixing bowl.
  3. Finely grate the onion and add it to the bowl with the potatoes.
  4. Add the lightly beaten eggs, whole wheat flour, salt, and pepper to the bowl and mix until well combined.
  5. Heat enough oil to coat the bottom of a large skillet over medium heat.
  6. Once the oil is hot, drop spoonfuls of the potato mixture into the oil and flatten slightly.
  7. Cook for 3 to 4 minutes on each side until golden and crispy.
  8. Transfer cooked pancakes to a paper towel-lined plate to drain excess oil, and garnish with sour cream and fresh herbs if desired.
