Instructions
- Peel and grate the potatoes using a box grater or food processor.
- Squeeze out as much liquid as possible from the grated potatoes using a clean kitchen towel or cheesecloth, then transfer to a mixing bowl.
- Finely grate the onion and add it to the bowl with the potatoes.
- Add the lightly beaten eggs, whole wheat flour, salt, and pepper to the bowl and mix until well combined.
- Heat enough oil to coat the bottom of a large skillet over medium heat.
- Once the oil is hot, drop spoonfuls of the potato mixture into the oil and flatten slightly.
- Cook for 3 to 4 minutes on each side until golden and crispy.
- Transfer cooked pancakes to a paper towel-lined plate to drain excess oil, and garnish with sour cream and fresh herbs if desired.
