Ingredients

  • 1.5 lbs russet potatoes
  • 1 large onion
  • 1 large egg
  • 1 tbsp all-purpose flour
  • ½ tsp salt
  • as needed for frying oil

Instructions

  1. Grate the potatoes and onion, then combine them in a bowl.
  2. Squeeze out excess liquid from the mixture using paper towels.
  3. In a separate bowl, whisk together the egg, flour, and salt.
  4. Mix the egg mixture into the potato mixture until well combined.
  5. Heat oil in a skillet over medium heat.
  6. Drop spoonfuls of the mixture into the pan and flatten them.
  7. Cook each pancake for 3–4 minutes on each side until golden brown.
  8. Repeat the process until all the mixture is used, adding more oil as needed.
