Ingredients

Potato Topping

  • 2 large russet potatoes
  • ½ teaspoon salt
  • ¼ cup butter
  • 2 tablespoons milk or cream
  • 1 large egg yolk

Filling

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion
  • 2 medium carrots
  • 2 cloves garlic
  • teaspoon ground thyme
  • 2 tablespoons all-purpose flour
  • 1 tablespoon ketchup or tomato paste
  • cups chicken broth
  • 1 teaspoon Worcestershire sauce
  • ½ cup frozen peas

Instructions

  1. Preheat the oven to 400°F.
  2. Simmer the potatoes in salted water until fork-tender, then drain.
  3. Brown the ground beef in a skillet, then set aside and remove excess fat.
  4. Cook onions and carrots in the same skillet until softened, then add garlic and thyme.
  5. Stir in flour and ketchup/tomato paste, then add chicken broth and Worcestershire sauce, simmering until thickened.
  6. Season the mixture with salt and pepper, then stir in the ground beef and peas.
  7. Mash the cooked potatoes with butter, milk/cream, and egg yolk until smooth.
  8. Spread the mashed potatoes over the beef mixture in the skillet.
  9. Bake for 35 to 45 minutes until the potatoes are golden brown.
  10. Let cool for 10 to 15 minutes before serving.
