Ingredients

Cheesy Mashed Potatoes

  • lbs. russet potatoes
  • 1 tsp salt
  • 2 Tbsp butter
  • ½ cup milk
  • 4 oz. shredded cheddar

Cottage Pie Filling

  • 2 Tbsp olive oil
  • 1 medium yellow onion
  • 2 cloves garlic
  • ½ lb. ground beef
  • 2 Tbsp all-purpose flour
  • 1 cup beef broth
  • ½ Tbsp Worcestershire sauce
  • 1 tsp dried rosemary
  • ½ tsp dried thyme
  • 2 cups frozen peas and carrots
  • 1 cup frozen corn
  • ½ tsp salt

Instructions

  1. Peel and chop the potatoes into 1-inch cubes, rinse, and boil in salted water until tender.
  2. Drain and rinse the potatoes, then return them to the pot with butter and milk to mash until smooth, adding cheddar cheese.
  3. Preheat the oven to 350°F and prepare the filling by sautéing diced onion and minced garlic in olive oil until soft.
  4. Add ground beef to the skillet and cook until fully browned, then stir in flour and cook for a couple of minutes.
  5. Pour in beef broth and simmer until thickened, then add Worcestershire sauce, herbs, and frozen vegetables.
  6. Transfer the beef mixture to a casserole dish and top with the cheesy mashed potatoes.
  7. Bake for 30 minutes, then broil for a few minutes for extra browning if desired.
  8. Let the casserole rest for 5-10 minutes before serving.
