Instructions
- Preheat the oven to 350°F and grease or line a muffin tin.
- Blend graham crackers and melted butter in a food processor until combined.
- Divide the crumbs evenly among the muffin tins and press down to flatten.
- Bake the crust for 6 minutes.
- Clean the food processor and add all cheesecake filling ingredients.
- Blend the filling until smooth.
- Divide the filling evenly among the muffin tins and bake for 17-20 minutes until set.
- Let cool for 15 minutes before refrigerating for at least 2 hours.
- Top with warmed blueberries if desired.
