Ingredients

Crust

  • 10 pieces graham crackers
  • 6 tbsp melted butter

Cheesecake Filling

  • 1 block neufchatel cream cheese
  • ½ cup plain Greek yogurt
  • ¼ cup honey
  • 1 piece egg
  • 2 tsp vanilla
  • a pinch salt

Optional Topping

  • to taste warmed blueberries

Instructions

  1. Preheat the oven to 350°F and grease or line a muffin tin.
  2. Blend graham crackers and melted butter in a food processor until combined.
  3. Divide the crumbs evenly among the muffin tins and press down to flatten.
  4. Bake the crust for 6 minutes.
  5. Clean the food processor and add all cheesecake filling ingredients.
  6. Blend the filling until smooth.
  7. Divide the filling evenly among the muffin tins and bake for 17-20 minutes until set.
  8. Let cool for 15 minutes before refrigerating for at least 2 hours.
  9. Top with warmed blueberries if desired.
