Ingredients

Dough

  • 2 cups all purpose flour
  • cup sugar
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 8 tablespoons unsalted butter
  • 2 large eggs

Filling

  • 3 large peaches
  • 1 ½ cups blueberries
  • ½ cup Sugar in the raw
  • 1 egg beaten

Instructions

  1. Combine flour, sugar, baking powder, and salt in a food processor and pulse to mix.
  2. Add cold butter pieces and pulse until mixed in.
  3. Add eggs and pulse until dough forms a ball.
  4. Turn dough onto a floured surface, divide into 6 pieces, and roll each into a 6-inch disc.
  5. Refrigerate discs for 10 minutes.
  6. Mix fruit with sugar and divide between the discs.
  7. Fold dough edges about 1 inch around the filling, making overlapping folds.
  8. Brush dough with beaten egg.
  9. Bake at 350°F for 15-20 minutes.
