Ingredients

The crust

  • 1 ¼ cups all-purpose flour
  • ½ cup unsalted butter, cubed
  • 3 tablespoons ice-cold water
  • 1 large egg
  • 1 tablespoon superfine sugar

The filling

  • 1 ½ cups strawberries, trimmed and sliced
  • 1 ½ cups raspberries
  • 1 cup blueberries
  • 2 tablespoons cornstarch
  • ¼ cup sugar
  • 1 tablespoon lemon juice

Instructions

  1. 1. Combine flour and butter in a bowl until you have coarse crumbs.
  2. 2. Add 2 tablespoons of ice-cold water and mix until a thick dough forms, then refrigerate for 10 minutes.
  3. 3. Toss the berries with cornstarch, sugar, and lemon juice in a separate bowl.
  4. 4. Preheat the oven to 375°F and line a baking sheet with parchment paper.
  5. 5. Roll the dough into a 12-inch circle on the lined sheet and place the berry mixture in the center, leaving a 2-inch border.
  6. 6. Fold the dough over the fruit, whisk the egg with the remaining water, and brush it over the dough edges.
  7. 7. Sprinkle sugar on top and bake for 30-35 minutes until golden.
  8. 8. Let cool for 5 minutes before slicing and serving.
