Ingredients

The crostini

  • 1 French baguette thinly sliced and toasted

The topping

  • 2 cups fresh blueberries
  • 4 tablespoons fresh lemon juice
  • 1 tablespoon honey
  • 1 cup ricotta cheese
  • 1 large lemon zest
  • additional honey for drizzling

Instructions

  1. Preheat the oven to 400°F.
  2. Place blueberries on a baking sheet, drizzle with 2 tablespoons of lemon juice and 1 tablespoon of honey, and toss gently.
  3. Roast the blueberries for 7-10 minutes until soft but not bursting, then let cool.
  4. In a bowl, mix ricotta cheese with the remaining lemon juice and lemon zest.
  5. Spread the ricotta mixture on toasted baguette slices.
  6. Top each slice with roasted blueberries and drizzle with additional honey before serving.
