Instructions
- Preheat the oven to 400°F.
- Place blueberries on a baking sheet, drizzle with 2 tablespoons of lemon juice and 1 tablespoon of honey, and toss gently.
- Roast the blueberries for 7-10 minutes until soft but not bursting, then let cool.
- In a bowl, mix ricotta cheese with the remaining lemon juice and lemon zest.
- Spread the ricotta mixture on toasted baguette slices.
- Top each slice with roasted blueberries and drizzle with additional honey before serving.
