Roasted Grape Crostini with Brie

Instructions
- Preheat the oven to 400°F and prepare baking sheets with parchment paper.
- Brush olive oil on both sides of the bread slices and arrange them on a large baking sheet.
- Remove stems from grapes, toss with olive oil, salt, and pepper, and place on a small baking sheet.
- Roast the grapes on the upper rack and the bread on the lower rack for about 20 minutes, checking the bread halfway through.
- Once the bread is golden and the grapes are tender, remove them from the oven.
- Slice the brie and top each toast with brie and roasted grapes, finishing with thyme and pepper.
