Roasted Grape Crostini with Brie

Ingredients

  • 1 small loaf crusty whole grain bread
  • 1 pound seedless red grapes
  • 3 tablespoons olive oil
  • ¼ pound wedge of brie
  • 1 to 2 sprigs fresh thyme
  • to taste freshly ground pepper
  • to taste salt

Instructions

  1. Preheat the oven to 400°F and prepare baking sheets with parchment paper.
  2. Brush olive oil on both sides of the bread slices and arrange them on a large baking sheet.
  3. Remove stems from grapes, toss with olive oil, salt, and pepper, and place on a small baking sheet.
  4. Roast the grapes on the upper rack and the bread on the lower rack for about 20 minutes, checking the bread halfway through.
  5. Once the bread is golden and the grapes are tender, remove them from the oven.
  6. Slice the brie and top each toast with brie and roasted grapes, finishing with thyme and pepper.
