Honey Raspberry Brie Crostini with Basil Oil

Ingredients

The Crostini

  • 1 loaf ciabatta bread or any crusty bread, sliced
  • to taste ml olive oil, for drizzling
  • 6-8 ounces brie, cut into wedges
  • 1-2 cups fresh raspberries
  • to taste ml honey, for drizzling
  • to taste cups watercress or arugula, for serving

Basil Oil

  • cup olive oil
  • ¾ cup fresh basil
  • 1 each lemon, zest and juice
  • to taste ml kosher salt
  • to taste ml pepper

Instructions

  1. Preheat the oven to 400°F.
  2. Drizzle olive oil on both sides of the bread slices and sprinkle with salt, then place on a baking sheet.
  3. Bake for 5 minutes, flip the bread, and add brie on top of each piece, then return to the oven for another 5 minutes.
  4. Transfer the bread to a serving board, top with raspberries, drizzle with honey and basil oil, and finish with watercress.
  5. For the basil oil, blend all ingredients until smooth and adjust salt as needed.
