Roasted Grape Crostini with Ricotta Honey

Instructions
- Preheat the oven to 400°F.
- Slice the baguette into 1-inch thick slices and brush with olive oil.
- Toast the baguette slices in the oven for 10 minutes, flipping halfway through.
- On a sheet pan lined with parchment paper, toss the grapes with balsamic vinegar, olive oil, salt, and pepper.
- Roast the grapes in the oven for about 15-17 minutes until softened and starting to burst.
- Mix the ricotta with lemon zest and honey.
- Spread about 1 tablespoon of the ricotta mixture on each crostini, top with roasted grapes, and garnish with thyme or rosemary.
