Ingredients

The crostini

  • 12-14 slices baguette
  • to taste tablespoons olive oil

The roasted grapes

  • 2 cups red grapes
  • tablespoons balsamic vinegar
  • tablespoons olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon ground pepper

The ricotta mixture

  • 1 cup ricotta
  • 1 zest lemon
  • 2 tablespoons honey
  • to taste sprigs fresh thyme or rosemary

Instructions

  1. Preheat the oven to 400°F.
  2. Slice the baguette into 1-inch thick slices and brush with olive oil.
  3. Toast the baguette slices in the oven for 10 minutes, flipping halfway through.
  4. On a sheet pan lined with parchment paper, toss the grapes with balsamic vinegar, olive oil, salt, and pepper.
  5. Roast the grapes in the oven for about 15-17 minutes until softened and starting to burst.
  6. Mix the ricotta with lemon zest and honey.
  7. Spread about 1 tablespoon of the ricotta mixture on each crostini, top with roasted grapes, and garnish with thyme or rosemary.
