Thyme-Roasted Grapes with Ricotta & Grilled Bread

Ingredients

The grapes

  • 1 lb grapes
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • 4 sprigs fresh thyme

The bread and ricotta

  • 4 slices good rustic bread
  • 2 tbsp olive oil
  • 1 cup fresh ricotta

Instructions

  1. Preheat the oven to 450ºF and spread grapes on a sheet pan.
  2. Drizzle grapes with olive oil, sprinkle with salt, and add thyme leaves. Toss gently.
  3. Roast grapes in the oven for 7 to 9 minutes until they begin to burst.
  4. While grapes are roasting, heat a grill or grill pan to medium-high and brush bread with olive oil.
  5. Grill the bread until toasted.
  6. Spread fresh ricotta over the grilled bread and top with roasted grapes, discarding thyme sprigs.
