Instructions
- Preheat the oven to 450ºF and spread grapes on a sheet pan.
- Drizzle grapes with olive oil, sprinkle with salt, and add thyme leaves. Toss gently.
- Roast grapes in the oven for 7 to 9 minutes until they begin to burst.
- While grapes are roasting, heat a grill or grill pan to medium-high and brush bread with olive oil.
- Grill the bread until toasted.
- Spread fresh ricotta over the grilled bread and top with roasted grapes, discarding thyme sprigs.
