Ricotta with Grilled Bread, Thyme, & Olive Oil

The ricotta mixture

fresh ricotta

whole milk (optional)

coarse sea salt

coarsely ground black pepper

fresh thyme leaves

teaspoon
dried oregano
Instructions
- 1. Preheat a grill or broiler to very hot.
- 2. Brush both sides of the bread slices with olive oil and sprinkle with salt.
- 3. In a mixer or bowl, whisk the ricotta and milk (if using) until light and fluffy, then season with salt.
- 4. Transfer the ricotta mixture to a serving bowl and sprinkle with sea salt, pepper, thyme, and oregano. Drizzle with olive oil.
- 5. Grill or broil the bread until toasted and lightly charred, then rub one side with the garlic clove.
- 6. Serve the grilled bread hot with the ricotta mixture on the side.
