Ricotta with Grilled Bread, Thyme, & Olive Oil

Ingredients

The bread

  • 8 slices crusty bread
  • to taste none extra virgin olive oil
  • to taste none kosher or table salt
  • 2 large cloves garlic

The ricotta mixture

  • 2 cups fresh ricotta
  • 1 cup whole milk (optional)
  • 1 teaspoon coarse sea salt
  • 1 teaspoon coarsely ground black pepper
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon dried oregano

Instructions

  1. 1. Preheat a grill or broiler to very hot.
  2. 2. Brush both sides of the bread slices with olive oil and sprinkle with salt.
  3. 3. In a mixer or bowl, whisk the ricotta and milk (if using) until light and fluffy, then season with salt.
  4. 4. Transfer the ricotta mixture to a serving bowl and sprinkle with sea salt, pepper, thyme, and oregano. Drizzle with olive oil.
  5. 5. Grill or broil the bread until toasted and lightly charred, then rub one side with the garlic clove.
  6. 6. Serve the grilled bread hot with the ricotta mixture on the side.
