Ingredients

The dip

  • 16 oz. whole milk Ricotta
  • 3 cloves garlic
  • 3 tablespoons minced fresh thyme
  • 1 zest lemon
  • to taste freshly cracked pepper
  • 1 teaspoon kosher salt
  • ¼ cup extra-virgin olive oil
  • ¼ cup freshly grated parmesan
  • to taste red pepper flakes

For serving

  • to taste fresh bread

Instructions

  1. Preheat the oven to 425°F.
  2. Combine all ingredients in a bowl until well mixed.
  3. Transfer the mixture to a large oven-safe skillet or several small gratin dishes.
  4. Bake for 10 to 15 minutes until bubbling and slightly golden.
  5. Let cool briefly before serving with fresh bread.
