Ingredients

The crostini

  • 1 baguette sliced ½-1 inch thick
  • 1 tablespoon olive oil
  • dash coarse salt

The toppings

  • ½ cup unsweetened dried cherries or cranberries
  • ½ cup cherry wine or sweet red wine
  • 4 ounces creamy goat cheese
  • 2 ounces smoked ham, thinly sliced
  • ¼ cup unsalted nuts, crushed
  • 1 tablespoon fresh thyme leaves
  • 2 tablespoons honey

Instructions

  1. Soak the dried cherries in wine for at least 2 hours until plump, then drain.
  2. Preheat the oven to 375°F.
  3. Drizzle olive oil on baguette slices and sprinkle with coarse salt, then bake for 7-8 minutes until crisp.
  4. Spread goat cheese on each crostini.
  5. Top with ham, a tablespoon of wine-soaked cherries, crushed nuts, and thyme leaves.
  6. Drizzle honey over each crostini and serve.
