Cabbage and Noodles

The cooking water
Instructions
- Fill a large pot with water and bring it to a boil.
- Add the noodles and cook until al dente, then drain and reserve 1 cup of pasta water.
- In a large skillet, heat 2 tablespoons of vegan butter and sauté the garlic and onions for 5 minutes.
- Add the chopped cabbage and cook for 4 minutes, stirring frequently.
- Add half of the reserved pasta water and cook until the cabbage is tender.
- Combine the cooked pasta with the cabbage mixture, adding the remaining pasta water, salt, and pepper to taste.
- Remove from heat, sprinkle with parsley, and serve immediately.
