Ingredients

The main ingredients

  • 1 pound noodles or pasta, egg-free, uncooked
  • 3 tablespoons vegan butter or margarine spread
  • 1 large onion, sliced into half moons
  • 2 cloves garlic, minced
  • pounds cabbage, chopped
  • 1 cup reserved pasta water
  • to taste salt
  • to taste freshly ground black pepper
  • 3 tablespoons chopped fresh parsley

The cooking water

  • as needed water

Instructions

  1. Fill a large pot with water and bring it to a boil.
  2. Add the noodles and cook until al dente, then drain and reserve 1 cup of pasta water.
  3. In a large skillet, heat 2 tablespoons of vegan butter and sauté the garlic and onions for 5 minutes.
  4. Add the chopped cabbage and cook for 4 minutes, stirring frequently.
  5. Add half of the reserved pasta water and cook until the cabbage is tender.
  6. Combine the cooked pasta with the cabbage mixture, adding the remaining pasta water, salt, and pepper to taste.
  7. Remove from heat, sprinkle with parsley, and serve immediately.
