Ingredients

  • 4 cups cooked and cooled green lentils
  • 1 large carrot, finely diced
  • 2 pieces Lebanese cucumbers, finely diced
  • ½ cup toasted unsalted sunflower seeds
  • ¼ cup finely chopped parsley
  • ¼ medium red onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp extra-virgin olive oil
  • ½ piece lemon juice
  • ½ tsp salt
  • ½ tsp ground black pepper

Instructions

  1. Combine all ingredients in a large bowl.
  2. Toss gently to mix everything well.
  3. Serve immediately or refrigerate for about an hour to enhance flavors.
  4. Store leftovers in the refrigerator for up to a week.
