Instructions
- Cook the lentils by combining them with water in a large saucepan, bring to a boil, then simmer until tender.
- Prepare the dressing by whisking together olive oil, vinegar, maple syrup, mustard, minced garlic, salt, and pepper in a large bowl.
- Add diced cucumber, red onion, bell pepper, and celery to the dressing and toss well.
- Once the lentils have cooled, stir them into the vegetable mixture along with raisins and sliced almonds.
- Adjust seasoning as needed and let the salad marinate for at least 15 minutes before serving.
