Ingredients

  • 1 ½ cups dry green or brown lentils
  • ¼ cup olive oil
  • ¼ cup apple cider vinegar
  • 1 tablespoon maple syrup
  • 1 tablespoon stone-ground mustard
  • 2 small cloves garlic
  • 1 ½ to 2 teaspoons fine sea salt
  • ½ teaspoon ground black pepper
  • 1 cucumber diced
  • 1 red onion diced
  • 1 red bell pepper diced
  • 3 stalks celery
  • 1 cup golden raisins (optional)
  • 1 cup sliced almonds (optional)

Instructions

  1. Cook the lentils by combining them with water in a large saucepan, bring to a boil, then simmer until tender.
  2. Prepare the dressing by whisking together olive oil, vinegar, maple syrup, mustard, minced garlic, salt, and pepper in a large bowl.
  3. Add diced cucumber, red onion, bell pepper, and celery to the dressing and toss well.
  4. Once the lentils have cooled, stir them into the vegetable mixture along with raisins and sliced almonds.
  5. Adjust seasoning as needed and let the salad marinate for at least 15 minutes before serving.
