Easy Pumpkin Soup

Ingredients

  • ½ pieces bacon, chopped
  • 2 cloves garlic, minced (or 1 tsp garlic oil)
  • 3 cups chicken broth
  • 1 can pumpkin puree (15 oz can, just pumpkin and no other ingredients)
  • 1 cup coconut milk (plus more for topping)
  • 1 tbsp coconut sugar (more or less to taste, omit for Whole30)
  • ½ tsp cinnamon (more or less to taste)
  • ½ tsp sea salt
  • ¼ tsp ground pepper
  • to taste optional pumpkin seeds (for topping)
  • 2 tbsp fresh chives, chopped (for garnish)

Instructions

  1. Prepare the bacon, garlic, and chives, and set aside.
  2. In a large pot, cook the bacon over medium heat until crispy, then remove and place on a paper towel, reserving the fat.
  3. Add the garlic to the pot and cook until fragrant, about 1-2 minutes.
  4. Stir in the broth, pumpkin puree, coconut milk, coconut sugar, cinnamon, sea salt, and pepper, and mix well.
  5. Let the mixture simmer for 8-10 minutes to combine the flavors.
  6. Serve the soup in bowls, topped with a drizzle of coconut milk, bacon bits, chives, and pumpkin seeds.
