Instructions
- Dice the onion and sauté it in butter over medium heat until soft and translucent.
- Add the pumpkin purée, chicken broth, and spices to the pot, stirring to combine.
- Bring the soup to a simmer and let it cook for 10 minutes.
- Taste the soup and add salt as needed.
- Serve topped with pepitas and a swirl of sour cream.
