Lime Angel Food Cake

Ingredients

  • cups powdered sugar, sifted
  • 1 cup unbleached all-purpose flour
  • cups egg whites, at room temperature (10-12 egg whites)
  • 4 teaspoons lime zest
  • teaspoons fresh lime juice

Instructions

  1. Preheat the oven to 350°F.
  2. Sift the flour in a large bowl and repeat two more times.
  3. In a large mixing bowl, add egg whites, lime zest, and lime juice. Whisk on medium speed, gradually adding one cup of powdered sugar, then add remaining sugar one tablespoon at a time until gone. Beat until soft peaks form, about 10 minutes.
  4. Gradually add sifted flour through a sieve in three parts, gently folding the mixture in between each addition.
  5. Pour the batter into a 10-inch angel food cake pan. Pound the pan on the counter to remove bubbles and do not spray the pan.
  6. Bake for 40 minutes or until golden brown and springy to the touch. Cool upside down on a bottle or cooling rack, then remove from the pan and slice.
