Lime Angel Food Cake

unbleached all-purpose flour

egg whites, at room temperature (10-12 egg whites)

lime zest

fresh lime juice
Instructions
- Preheat the oven to 350°F.
- Sift the flour in a large bowl and repeat two more times.
- In a large mixing bowl, add egg whites, lime zest, and lime juice. Whisk on medium speed, gradually adding one cup of powdered sugar, then add remaining sugar one tablespoon at a time until gone. Beat until soft peaks form, about 10 minutes.
- Gradually add sifted flour through a sieve in three parts, gently folding the mixture in between each addition.
- Pour the batter into a 10-inch angel food cake pan. Pound the pan on the counter to remove bubbles and do not spray the pan.
- Bake for 40 minutes or until golden brown and springy to the touch. Cool upside down on a bottle or cooling rack, then remove from the pan and slice.
