Instructions
- Preheat the oven to 325°F (162°C) and line the bottom of a 9.5-inch tube pan with parchment paper without greasing it.
- In a large bowl, whip egg whites and cream of tartar until frothy, then gradually add ¾ cup of powdered Besti and beat until soft peaks form.
- Gently fold in the vanilla extract.
- In another bowl, whisk together almond flour, coconut flour, xanthan gum, sea salt, and the remaining ¾ cup of powdered Besti until there are no lumps.
- Sift half of the flour mixture over the egg whites and fold gently until just combined. Repeat with the remaining flour mixture.
- Transfer the batter to the lined tube pan and smooth the top.
- Bake for about 45 minutes until golden and springy to the touch.
- Immediately turn the pan upside down to cool, ensuring airflow underneath.
- Once completely cool, run a knife around the edges to release the cake and gently invert it to remove from the pan.
