Ingredients

  • 1 cup cake flour
  • cups sugar
  • 12 large egg whites
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • teaspoons cream of tartar

Instructions

  1. Preheat the oven to 325°F and do not grease or flour the pan.
  2. Whisk together the cake flour and ¾ cup of sugar in a mixing bowl and set aside.
  3. In a stand mixer, combine egg whites, salt, and extracts, then beat until frothy.
  4. Sprinkle in the cream of tartar and continue beating until stiff peaks form.
  5. Gradually add the remaining sugar, folding in the dry ingredients.
  6. Spoon the batter into the pan and bake for 40 to 45 minutes until golden brown.
  7. Remove the cake from the oven and cool it upside down for 1½ hours.
  8. Loosen the edges with a knife and remove the cake from the pan.
  9. Store the cake covered on the counter for up to a week or freeze for up to 3 months.
