Homemade Angel Food Cake

Instructions
- Preheat the oven to 325°F and do not grease or flour the pan.
- Whisk together the cake flour and ¾ cup of sugar in a mixing bowl and set aside.
- In a stand mixer, combine egg whites, salt, and extracts, then beat until frothy.
- Sprinkle in the cream of tartar and continue beating until stiff peaks form.
- Gradually add the remaining sugar, folding in the dry ingredients.
- Spoon the batter into the pan and bake for 40 to 45 minutes until golden brown.
- Remove the cake from the oven and cool it upside down for 1½ hours.
- Loosen the edges with a knife and remove the cake from the pan.
- Store the cake covered on the counter for up to a week or freeze for up to 3 months.
