Ingredients

The cake

  • cups granulated sugar
  • 1 cup cake flour
  • ¼ teaspoon salt
  • 12 large egg whites
  • teaspoons cream of tartar
  • teaspoons lemon juice
  • teaspoons vanilla extract
  • ½ teaspoon almond extract

For serving

  • to taste fresh berries
  • to taste whipped cream

Instructions

  1. Preheat the oven to 375°F and adjust the oven rack to the lower-middle position.
  2. Prepare an un-greased tube pan.
  3. In a food processor, pulse the sugar until fine, reserving 1 cup.
  4. Add flour and salt to the remaining sugar in the processor and pulse until aerated.
  5. In a mixer, beat egg whites and cream of tartar until frothy.
  6. Gradually add the reserved sugar while continuing to beat until soft peaks form.
  7. Mix in lemon juice, vanilla, and almond extract until incorporated.
  8. Gently fold in the flour mixture into the egg whites.
  9. Pour the batter into the prepared pan and smooth the top.
  10. Bake for about 40 minutes until golden and springy.
  11. Invert the cake to cool completely for 2-3 hours.
  12. Run a knife around the edges to unmold and slice to serve.
