Instructions
- Preheat the oven to 375°F and adjust the oven rack to the lower-middle position.
- Prepare an un-greased tube pan.
- In a food processor, pulse the sugar until fine, reserving 1 cup.
- Add flour and salt to the remaining sugar in the processor and pulse until aerated.
- In a mixer, beat egg whites and cream of tartar until frothy.
- Gradually add the reserved sugar while continuing to beat until soft peaks form.
- Mix in lemon juice, vanilla, and almond extract until incorporated.
- Gently fold in the flour mixture into the egg whites.
- Pour the batter into the prepared pan and smooth the top.
- Bake for about 40 minutes until golden and springy.
- Invert the cake to cool completely for 2-3 hours.
- Run a knife around the edges to unmold and slice to serve.
