Ingredients

The cake

  • 1 and ¾ cups granulated sugar
  • 1 cup cake flour
  • 2 tablespoons cake flour
  • ¼ teaspoon salt
  • 12 large egg whites
  • 1 and ½ teaspoons cream of tartar
  • 1 and ½ teaspoons pure vanilla extract

Optional toppings

  • to taste confectioners’ sugar
  • to taste whipped cream
  • to taste berries

Instructions

  1. Preheat the oven to 325°F (163°C) and adjust the oven rack to the lower middle position.
  2. Pulse the granulated sugar in a food processor until fine, then set aside 1 cup.
  3. Add the cake flour and salt to the remaining sugar in the processor and pulse until aerated.
  4. In a large bowl, whip the egg whites and cream of tartar until foamy, then gradually add the reserved sugar and whip until soft peaks form.
  5. Gently sift the flour mixture into the egg whites in three additions, folding carefully after each.
  6. Pour the batter into an ungreased tube pan and smooth the top.
  7. Bake for 40-45 minutes until a toothpick comes out clean, rotating the pan halfway through.
  8. Cool the cake upside down on a wire rack for about 3 hours.
  9. Run a knife around the edges to release the cake and tap the pan to help it come out.
  10. Dust with confectioners’ sugar if desired and slice with a serrated knife.
