Instructions
- Preheat the oven to 400º F.
- Slice the cabbage into 1-inch rounds and spread them on a baking sheet.
- Drizzle the cabbage with oil and season with salt and pepper.
- Roast the cabbage for 40 minutes until tender and browned.
- While the cabbage is roasting, prepare the dressing by blending all dressing ingredients until smooth.
- If the dressing is too thick, add water gradually until the desired consistency is reached.
- Once the cabbage is done, transfer it to a serving plate.
- Toss the roasted cabbage with the dressing and top with croutons, capers, and hemp hearts if using.
