Vegan Caesar Salad with Roasted Cabbage

Ingredients

The salad

  • 1 head green cabbage
  • 1 tablespoon grapeseed oil
  • to taste salt
  • to taste pepper
  • ½ cup croutons
  • 2 tablespoons capers
  • 1 tablespoon hemp hearts (optional)

The dressing

  • ½ cup silken tofu
  • ¼ cup nutritional yeast (optional)
  • 3 tablespoons apple cider vinegar
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon caper brine
  • 1 tablespoon chopped garlic
  • 1 tablespoon chopped fresh chives (optional)
  • to taste salt
  • to taste pepper

Instructions

  1. Preheat the oven to 400º F.
  2. Slice the cabbage into 1-inch rounds and spread them on a baking sheet.
  3. Drizzle the cabbage with oil and season with salt and pepper.
  4. Roast the cabbage for 40 minutes until tender and browned.
  5. While the cabbage is roasting, prepare the dressing by blending all dressing ingredients until smooth.
  6. If the dressing is too thick, add water gradually until the desired consistency is reached.
  7. Once the cabbage is done, transfer it to a serving plate.
  8. Toss the roasted cabbage with the dressing and top with croutons, capers, and hemp hearts if using.
