Ingredients

The salad

  • 3 cups roasted sweet potato chunks
  • 1.5 tablespoons olive oil
  • 1 large sweet potato
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon cumin
  • 1 cup cooked and cooled quinoa
  • 1 cup diced cooked chicken breast
  • 1/2 cup thinly sliced onion
  • 1/4 cup chopped cilantro
  • 1 medium sliced or diced avocado

The dressing

  • 1 serving Smoked Paprika Vinaigrette or Maple Bacon Vinaigrette

Instructions

  1. Preheat the oven to 400°F.
  2. Toss sweet potato chunks in olive oil and spices.
  3. Spread the sweet potato on a baking sheet and roast for about 20 minutes until browned on edges.
  4. In a large salad bowl, layer spinach or kale.
  5. Add the roasted sweet potatoes, quinoa, chicken, onion, cilantro, and avocado on top.
  6. Dress the salad with your choice of vinaigrette.
