Instructions
- Preheat the oven to 400°F.
- Toss sweet potato chunks in olive oil and spices.
- Spread the sweet potato on a baking sheet and roast for about 20 minutes until browned on edges.
- In a large salad bowl, layer spinach or kale.
- Add the roasted sweet potatoes, quinoa, chicken, onion, cilantro, and avocado on top.
- Dress the salad with your choice of vinaigrette.
