Vegan Potato Salad

Ingredients

  • 1 x baby potatoes
  • cup Patience Fruit & Co. Unsweetened Dried Cranberries
  • cup red onion, finely chopped
  • cup green onion, finely chopped
  • cup celery, finely chopped
  • 1 clove garlic, pressed
  • ¼ cup dill, finely chopped
  • ¼ cup parsley, finely chopped
  • ¼ cup cilantro, finely chopped
  • ½ unit juice of a lemon
  • 2 tbsp olive oil
  • 2 tbsp vegan mayo
  • 1 tsp sea salt
  • ½ tsp fresh cracked pepper

Instructions

  1. 1. Boil water in a large pot and season well with salt.
  2. 2. Cook the baby potatoes until tender, then strain and cool until safe to touch.
  3. 3. In a large mixing bowl, gently toss together all the ingredients.
  4. 4. Serve with your favorite main dish or salad.
