Cilantro Lime Beef Satay
Ingredients
The beef and wraps

beef sirloin, cut into 1” wide pieces, 1/4” thick slices

Naan, Pita or flatbread, enough for 4 wraps

The marinade

soy sauce

fresh chopped cilantro

The dipping sauce

low fat sour cream or greek yogurt

minced cilantro

The skewers

bamboo skewers (soak for 30 minutes beforehand)
Instructions
- Puree all marinade ingredients until it forms a paste.
- Combine marinade and beef in a container and marinate in the refrigerator for 4 hours.
- Thread the beef strips onto pre-soaked bamboo skewers.
- For the dipping sauce, combine all ingredients and refrigerate until ready to serve.
- Preheat a charcoal grill to medium high heat, about 350-400 degrees.
- Grill the skewers for 3 minutes on each side until char marks form.
- Grill the Naan or Pita bread for 30 seconds on each side to warm them.
- Serve the skewers inside the Naan or flatbread with the dipping sauce, arugula, and diced tomatoes.
