Instructions
- Prepare all ingredients and powder the sweetener if using.
- Cut the flank steak into strips, ensuring the grain runs horizontally.
- Skewer the meat, leaving enough handle for eating.
- Mix fish sauce, soy sauce, and sweetener in a dish and coat the beef.
- Sprinkle coriander over the beef and let it marinate for 15-20 minutes.
- For the peanut sauce, warm peanut butter in the microwave, then mix in chile garlic sauce, sweetener, and curry paste.
- Gradually add coconut milk while whisking until smooth.
- Preheat the grill and coat beef with olive oil.
- Grill the skewers, using foil to protect the handles, until cooked to your liking.
- Serve with Thai cucumber salad or your choice of salad.
