Ingredients

Beef Satay & Marinade

  • 1 pound flank steak or skirt steak
  • 2 tablespoons Red Boat Fish Sauce or your favorite
  • 2 tablespoons Tamari Soy Sauce or coconut aminos
  • 2 tablespoons low carb brown sugar powdered (Swerve Confection, coconut sugar, or honey)
  • ½ teaspoon ground coriander

Thai Peanut Sauce

  • ¼ cup smooth peanut butter or almond butter
  • cup coconut milk full fat from a can
  • 1-2 teaspoons chile garlic sauce
  • 1 tablespoon low carb brown sugar powdered (Swerve Confection, coconut sugar or honey)
  • ½ teaspoon Thai Red Curry Paste

Extras

  • 1 tablespoon olive oil to oil meat before grilling
  • as needed pieces bamboo skewers soaked in water
  • as needed pieces foil to keep the skewers from burning

Instructions

  1. Prepare all ingredients and powder the sweetener if using.
  2. Cut the flank steak into strips, ensuring the grain runs horizontally.
  3. Skewer the meat, leaving enough handle for eating.
  4. Mix fish sauce, soy sauce, and sweetener in a dish and coat the beef.
  5. Sprinkle coriander over the beef and let it marinate for 15-20 minutes.
  6. For the peanut sauce, warm peanut butter in the microwave, then mix in chile garlic sauce, sweetener, and curry paste.
  7. Gradually add coconut milk while whisking until smooth.
  8. Preheat the grill and coat beef with olive oil.
  9. Grill the skewers, using foil to protect the handles, until cooked to your liking.
  10. Serve with Thai cucumber salad or your choice of salad.
