Instructions
- Prepare your ingredients and powder the sweetener if using.
- Cut the flank steak into 1 ½ inch strips against the grain.
- Skewer the meat, leaving a handle for easy eating.
- Mix the fish sauce, soy sauce, and sweetener in a baking dish and coat the beef.
- Sprinkle the meat with ground coriander and let it marinate for 15-20 minutes.
- For the peanut sauce, warm the peanut butter in the microwave and mix in the chile garlic sauce, sweetener, and Thai red curry paste.
- Gradually stir in the coconut milk until smooth.
- Preheat the grill and coat the beef with olive oil before grilling.
- Grill the skewers, placing foil under the handles to prevent burning, until cooked to your liking.
- Serve the beef satay with a Thai cucumber salad or your choice of sides.
