Ingredients

Beef Satay & Marinade

  • 1 pound flank steak or skirt steak
  • 2 tablespoons Red Boat Fish Sauce or your favorite
  • 2 tablespoons Tamari Soy Sauce or coconut aminos
  • 2 tablespoons Low carb brown sugar powdered (Swerve Confection, coconut sugar, or honey)
  • ½ teaspoon ground coriander

Thai Peanut Sauce

  • ¼ cup smooth peanut butter or almond butter
  • cup coconut milk full fat from a can
  • 1-2 teaspoons chile garlic sauce
  • 1 tablespoon Low carb brown sugar powdered (Swerve Confection, coconut sugar or honey)
  • ½ teaspoon Thai Red Curry Paste

Extras

  • 1 tablespoon olive oil to oil meat before grilling
  • as needed units bamboo skewers soaked in water
  • as needed units foil to keep the skewers from burning

Instructions

  1. Prepare your ingredients and powder the sweetener if using.
  2. Cut the flank steak into 1 ½ inch strips against the grain.
  3. Skewer the meat, leaving a handle for easy eating.
  4. Mix the fish sauce, soy sauce, and sweetener in a baking dish and coat the beef.
  5. Sprinkle the meat with ground coriander and let it marinate for 15-20 minutes.
  6. For the peanut sauce, warm the peanut butter in the microwave and mix in the chile garlic sauce, sweetener, and Thai red curry paste.
  7. Gradually stir in the coconut milk until smooth.
  8. Preheat the grill and coat the beef with olive oil before grilling.
  9. Grill the skewers, placing foil under the handles to prevent burning, until cooked to your liking.
  10. Serve the beef satay with a Thai cucumber salad or your choice of sides.
