Instructions
- Combine tapioca pearls with coconut milk and coconut cream in a bowl and let sit for 30 minutes.
- Transfer the mixture to a saucepan, add the sweetener, and heat over medium until simmering.
- Reduce heat to low and stir gently for 10-15 minutes until thickened, then remove from heat.
- Whisk in the vanilla extract.
- Distribute the pudding into small glasses and refrigerate for at least 4 hours.
- Before serving, blend the mango and spread it over the top of each pudding.
