Ingredients

The pudding

  • cup tapioca pearls
  • 2 cups coconut milk
  • ½ cup coconut cream
  • ½ cup granulated sweetener
  • 1 teaspoon vanilla extract

Optional topping

  • 1 cup mango puree

Instructions

  1. Combine tapioca pearls with coconut milk and coconut cream in a bowl and let sit for 30 minutes.
  2. Transfer the mixture to a saucepan, add the sweetener, and heat over medium until simmering.
  3. Reduce heat to low and stir gently for 10-15 minutes until thickened, then remove from heat.
  4. Whisk in the vanilla extract.
  5. Distribute the pudding into small glasses and refrigerate for at least 4 hours.
  6. Before serving, blend the mango and spread it over the top of each pudding.
