Southwestern Turkey Stuffed Peppers

Ingredients

The filling

  • lb. ground turkey
  • 1 T. cilantro
  • 1 tsp. chili powder
  • 1 poblano pepper diced
  • ½ cup onion, diced
  • 1 cup corn
  • 1 can black beans, low sodium (15oz), drained & rinsed
  • ½ tsp. salt
  • ¼ tsp. pepper

The peppers

  • 4 red peppers halved & seeds removed

The topping

  • 2 cans fire roasted tomatoes with garlic, drained
  • ½ cup Monterey Jack cheese

Instructions

  1. Preheat the oven to 350ºF.
  2. In a large bowl, combine the ground turkey, cilantro, chili powder, onion, corn, poblano, salt, and pepper.
  3. Gently mix in the drained black beans.
  4. In an 11×17-inch baking dish, arrange the red pepper halves face-up and fill each with about ¾ cup of the turkey mixture.
  5. Top each stuffed pepper with the drained fire-roasted tomatoes.
  6. Cover the baking dish with foil and bake for 30 minutes.
  7. After 30 minutes, remove the foil and bake for an additional 25 minutes.
  8. Top each pepper with cheese and return to the oven for 2-3 minutes until melted.
