Turkey Stuffed Peppers

Ingredients

The peppers

  • 6 large Bell peppers

The filling

  • 3 tbsp Olive oil
  • ¼ tsp Sea salt
  • ½ large Red onion (diced; ~1 cup)
  • lbs Ground turkey
  • 3 tbsp Taco seasoning
  • ¾ cup Water
  • 1 14.5-oz can Diced tomatoes (drained)
  • 2 cups Cheddar cheese (shredded)

Instructions

  1. Preheat the oven to 400°F (204°C).
  2. Prepare the peppers by chopping off the tops and scooping out the seeds and ribs. Slice a tiny layer off the bottoms to help them stand upright.
  3. Place the peppers in a baking dish, open side up. Drizzle with 2 tablespoons of olive oil and sprinkle with sea salt.
  4. Bake the peppers for about 15 minutes until soft and slightly puckered. Blot any excess liquid with paper towels.
  5. In a large pan, heat the remaining tablespoon of olive oil over medium heat. Add the diced red onions and sauté for 5-10 minutes until translucent.
  6. Add the ground turkey to the pan and cook for 8-10 minutes until browned.
  7. Stir in the taco seasoning and water, and simmer for 3-4 minutes until the liquid evaporates.
  8. Add the drained diced tomatoes to the mixture.
  9. Once the peppers are done baking, reduce the oven temperature to 350°F (177°C). Spoon the meat filling into the peppers, layering with cheese.
  10. Return to the oven for about 10 minutes until the cheese is melted.
