Instructions
- Preheat the oven to 400°F (204°C).
- Prepare the peppers by chopping off the tops and scooping out the seeds and ribs. Slice a tiny layer off the bottoms to help them stand upright.
- Place the peppers in a baking dish, open side up. Drizzle with 2 tablespoons of olive oil and sprinkle with sea salt.
- Bake the peppers for about 15 minutes until soft and slightly puckered. Blot any excess liquid with paper towels.
- In a large pan, heat the remaining tablespoon of olive oil over medium heat. Add the diced red onions and sauté for 5-10 minutes until translucent.
- Add the ground turkey to the pan and cook for 8-10 minutes until browned.
- Stir in the taco seasoning and water, and simmer for 3-4 minutes until the liquid evaporates.
- Add the drained diced tomatoes to the mixture.
- Once the peppers are done baking, reduce the oven temperature to 350°F (177°C). Spoon the meat filling into the peppers, layering with cheese.
- Return to the oven for about 10 minutes until the cheese is melted.
