Ground Turkey Stuffed Peppers

Ingredients

The peppers

  • 4 pieces bell peppers (any color)
  • to taste none fine sea salt & black pepper

The filling

  • 1 tablespoon olive oil
  • 1 small yellow onion, chopped
  • 1 pound ground turkey
  • 1 15 oz. can cooked brown lentils, drained and rinsed
  • 1 ½ cups marinara sauce
  • cup grated Parmesan cheese (optional)
  • 1 cup shredded mozzarella cheese (optional)

Instructions

  1. Preheat the oven to 375ºF.
  2. Cut the bell peppers in half lengthwise and remove seeds and membranes.
  3. Season the inside of each pepper with salt and pepper, then place them cut-side down in a baking dish.
  4. Bake the peppers for 15 minutes.
  5. In a skillet, heat olive oil over medium-high heat and sauté the onion for about 5 minutes.
  6. Add ground turkey, season with salt, and cook until no longer pink, about 8 minutes.
  7. Stir in lentils, additional salt, and marinara sauce until well mixed.
  8. Remove from heat and stir in Parmesan cheese if using.
  9. Flip the baked bell peppers cut-side up and fill each with the turkey mixture.
  10. Top with shredded mozzarella cheese if desired.
  11. Return to the oven and bake for an additional 25 minutes until the cheese is melted and golden.
  12. Let rest for 5 minutes before serving.
