Ground Turkey Stuffed Peppers

can cooked brown lentils, drained and rinsed

marinara sauce

grated Parmesan cheese (optional)

shredded mozzarella cheese (optional)
Instructions
- Preheat the oven to 375ºF.
- Cut the bell peppers in half lengthwise and remove seeds and membranes.
- Season the inside of each pepper with salt and pepper, then place them cut-side down in a baking dish.
- Bake the peppers for 15 minutes.
- In a skillet, heat olive oil over medium-high heat and sauté the onion for about 5 minutes.
- Add ground turkey, season with salt, and cook until no longer pink, about 8 minutes.
- Stir in lentils, additional salt, and marinara sauce until well mixed.
- Remove from heat and stir in Parmesan cheese if using.
- Flip the baked bell peppers cut-side up and fill each with the turkey mixture.
- Top with shredded mozzarella cheese if desired.
- Return to the oven and bake for an additional 25 minutes until the cheese is melted and golden.
- Let rest for 5 minutes before serving.
