Oven Roasted Chicken with Peaches

Instructions
- 1. Position the chicken breast side down and cut out the backbone.
- 2. Flip the chicken over and press on the chest bone to flatten it.
- 3. Place the chicken in a large cast iron skillet.
- 4. Rub the chicken with olive oil and season it with salt.
- 5. Scatter the sliced peaches, halved shallots, and thyme around the chicken.
- 6. Roast in the oven at 400°F for 55-60 minutes.
- 7. Serve with the peaches and pan sauce, garnished with parsley.
