Ingredients

The chicken

  • 1 whole chicken (2-3 pounds)

The seasoning and accompaniments

  • ¼ cup olive oil
  • 1 teaspoon celtic sea salt
  • 4 peaches, sliced
  • 4 shallots, halved
  • 6 sprigs fresh thyme
  • parsley leaves

Instructions

  1. 1. Position the chicken breast side down and cut out the backbone.
  2. 2. Flip the chicken over and press on the chest bone to flatten it.
  3. 3. Place the chicken in a large cast iron skillet.
  4. 4. Rub the chicken with olive oil and season it with salt.
  5. 5. Scatter the sliced peaches, halved shallots, and thyme around the chicken.
  6. 6. Roast in the oven at 400°F for 55-60 minutes.
  7. 7. Serve with the peaches and pan sauce, garnished with parsley.
