Ingredients

  • 1 lb ground mild Italian sausage
  • 3.5 tablespoons olive oil
  • 1 large sweet potato, cut into half-inch cubes
  • 2 medium Yukon gold potatoes, cut into half-inch cubes
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • 1 large yellow onion, sliced
  • 2 small honey crisp apples, minced
  • 1 tablespoon freshly minced thyme
  • 1 tablespoon freshly minced rosemary
  • 1 tablespoon freshly minced sage
  • teaspoon ground pepper
  • 12 oz store-bought stuffing cubes
  • 3.5 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons butter, cut into thin pads

Instructions

  1. Preheat the oven to 375ºF and prepare a 9×13-inch casserole dish with nonstick spray.
  2. In a skillet, partially brown the Italian sausage for 3-4 minutes and transfer it to the casserole dish.
  3. In the same skillet, add olive oil and both types of potatoes along with garlic powder and salt, cooking for 3-5 minutes, then transfer to the casserole dish.
  4. Caramelize the onion in the skillet with more olive oil for 7-10 minutes, then add to the casserole dish.
  5. Add the minced apples, fresh herbs, remaining garlic powder and salt, pepper, and bread cubes to the casserole dish and mix well.
  6. Combine beef broth and Worcestershire sauce in a measuring cup, pour over the stuffing mixture, and mix again.
  7. Top with butter pads and bake uncovered for 35-45 minutes until golden brown.
