Ingredients

  • 8 cups whole wheat sourdough bread, 1/2-inch cubes
  • 1 lb turkey breakfast sausage
  • 4 tablespoons butter
  • 1 ½ cups onion, chopped
  • 1 ¼ cups fennel bulb, chopped
  • 1 cup celery, chopped
  • 3 cups chopped, peeled Honeycrisp apple
  • 6 cloves garlic, minced
  • 3 tablespoons fresh sage, chopped
  • cup fresh parsley, chopped
  • 1 ½ cups chicken broth
  • ¼ cup apple cider
  • 1 large egg
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F.
  2. Toast the bread cubes on a baking sheet for about 20 minutes until golden.
  3. Cook the sausage in a skillet over medium heat until browned, then transfer to a paper towel-lined plate.
  4. In the same skillet, sauté onion, fennel, and celery in butter until tender, then add apple and garlic and cook until tender.
  5. Combine the toasted bread, sausage, and sautéed vegetables in a large bowl.
  6. In a separate bowl, whisk together chicken broth, apple cider, egg, salt, and pepper, then mix into the bread mixture.
  7. Transfer the stuffing to a greased baking dish and bake covered for 35 minutes, then uncover and bake for an additional 10 minutes until golden.
