Healthier Apple Sausage Stuffing

Instructions
- 1. Preheat the oven to 350°F.
- 2. Cut the bread into 1-inch pieces and toast on a baking sheet for 10-15 minutes until slightly brown and crispy.
- 3. Once cooled, transfer the toasted bread to a large bowl.
- 4. Brown the chicken sausage in a skillet until cooked through, then add it to the bowl with the bread.
- 5. In the same skillet, heat olive oil and sauté the celery and onions for 5 minutes.
- 6. Add garlic and apple chunks, and sauté for another 3-5 minutes until the apples are soft.
- 7. Pour the apple mixture over the bread and sausage in the bowl.
- 8. Add sage, thyme, salt, and pepper to the mixture.
- 9. In a separate bowl, whisk together the eggs and chicken broth, then pour this over the bread mixture.
- 10. Stir until all pieces are evenly coated, adjusting with more broth if needed.
- 11. Transfer the mixture to a greased 9x13 pan and bake uncovered for 50-55 minutes until golden brown.
- 12. If desired, sprinkle dried cranberries on top after baking.
