Ingredients

  • 10 cups cubed sandwich bread
  • 1 lb chicken sausage
  • 2 tbsp olive oil
  • 1 cup celery, diced
  • 1 small yellow onion
  • 2 cloves garlic, minced
  • 2 medium Gala apples, peeled and diced
  • 2 tsp dried sage
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1 tsp pepper
  • 3 large eggs
  • 2 cups chicken broth
  • ½ cup dried cranberries (optional)

Instructions

  1. 1. Preheat the oven to 350°F.
  2. 2. Cut the bread into 1-inch pieces and toast on a baking sheet for 10-15 minutes until slightly brown and crispy.
  3. 3. Once cooled, transfer the toasted bread to a large bowl.
  4. 4. Brown the chicken sausage in a skillet until cooked through, then add it to the bowl with the bread.
  5. 5. In the same skillet, heat olive oil and sauté the celery and onions for 5 minutes.
  6. 6. Add garlic and apple chunks, and sauté for another 3-5 minutes until the apples are soft.
  7. 7. Pour the apple mixture over the bread and sausage in the bowl.
  8. 8. Add sage, thyme, salt, and pepper to the mixture.
  9. 9. In a separate bowl, whisk together the eggs and chicken broth, then pour this over the bread mixture.
  10. 10. Stir until all pieces are evenly coated, adjusting with more broth if needed.
  11. 11. Transfer the mixture to a greased 9x13 pan and bake uncovered for 50-55 minutes until golden brown.
  12. 12. If desired, sprinkle dried cranberries on top after baking.
